Patrick Swayze’s Chicken Penne and Sun Dried Tomatoes Recipe

Ingredients:

1 teaspoon vegetable oil
8 ounces chicken breast; cooked, deboned, julienned
3 shallots; peeled and chopped
4 ounces sun-dried tomatoes — sliced
1/2 cup heavy cream
1 pound penne — cooked
1 1/2 teaspoon butter
OR
2 tablespoons vegetable oil
2 tablespoons parmesan — grated
1 teaspoon fresh basil — julienned

Directions:

Saute shallots in oil for 2 minutes or until soft. Add chicken and tomatoes and cook over moderate heat for 5 minutes. Add cream and cook, stirring occasionally, for 5 minutes. Add remaining ingredients and toss to combine. Serve immediately. Eat and enjoy!

This Recipe comes from the Kitchen of Brooke Shields. These cookies are fantastic, and not too difficult to make. Try them tonight for your family or friends!

Ingredients:
3 cups firmly packed brown sugar
1/4 cup butter
2 eggs, well beaten
1 teaspoon vanilla extract
1/2 cup flour
1 teaspoon baking powder
1/2 pound coarsely chopped pecans

Directions:

In large bowl, cream sugar and butter. Add eggs and vanilla and continue beating until well mixed.

In small bowl, mix flour, baking powder and nuts. Add to creamed ingredients. Chill until firm.

Preheat oven to 375. Grease and flour 2 large cookie sheets. Drop dough by teaspoons 3″ apart onto cookie sheets. Bake 9 minutes.

Remove form pan after allowing to cool 3 minutes. Cool on wire racks.

We’ve brought you recipes of stars in the past, and today we are featuring the recipe of one of the world’s most famous crooners; Frank Sinatra. Frank’s own eggplant Parmesan recipe comes from his book which benefits a children’s hospital in California. An easy homemade tomato sauce recipe is also included.

Frank Sinatra’s Eggplant Parmigiana Recipe:

Prep Time: 25 minutes

Cook Time: 1 hour, 15 minutes

Ingredients:

Tomato Sauce:
1/2 cup chopped onion
1/4 cup chopped celery
1 small clove garlic, minced
2 Tablespoons vegetable oil
1 (14-1/2 ounce) can tomatoes, cut up
1/3 cup tomato paste
1/2 teaspoon salt
1/4 teaspoon black pepper
1 teaspoon parsley flakes
1/2 teaspoon dried oregano, crushed
1 bay leaf

For the Eggplant:
1/4 cup all-purpose flour
1/2 teaspoon salt
1 medium eggplant, peeled and cut crosswise in 1/2-inch thick slices
1 egg, beaten
1/4 cup vegetable oil
1/2 cup (1-1/2 ounces) grated Parmesan cheese
1 (6 ounce) package mozzarella cheese
Preparation:

Tomato Sauce:
Saute the onion, celery, and garlic in oil in a large skillet until tender. Add the tomatoes, tomato paste, salt, pepper, parsley, oregano, and bay leaf. Simmer uncovered for about 15 minutes or until desired consistency. Remove bay leaf and set aside. Proceed with eggplant.

Eggplant:
Combine flour and salt. Dip eggplant in egg, then in seasoned flour. Saute eggplant slices in hot oil in large skillet for 3 minutes on each side, adding more oil if necessary. Drain slices well on paper towel.

Place 1/2 of eggplant in single layer in 10 x 6 x 2-inch baking dish, cutting slices to fit. Sprinkle with 1/2 of Parmesan cheese, 1/2 sauce and 1/2 mozzarella cheese. Cut remaining mozzarella into triangles. Repeat layers.

Bake, uncovered, at 400 degrees for 15 to 20 minutes or until hot.

Yield: 6 servings

Salma Hayek and Harvey Weinstein through the event in honor of Penelope Cruz after her Oscar nomination for “Vicky Cristina Barcelona.” A laundry list of stars appeared to share in the celebration including Scarlett Johansson and new husband Ryan Reynolds. Also in attendance were Ashton and Demi, Michael Douglas and Catherine Zeta-Jones, Antonio Banderas with Melanie Griffith, Charlize Theron and partner Stuart Townsend, Angela Bassett and her husband Courtney.
The New York Daily News reported:

“It was all celebs, with 1% normal people,” laughed one reveler. “Everyone’s eyes were riveted to the door, wondering who would come in next.”

Hayek greeted guests with daughter Valentina, 16 months old, on her hip. “Everyone gushed about how beautiful she is,” said our source. “Salma was so proud.”

The theme for the evening was inspired by the “Vicky” flick. Hayek’s house was decked out as a photographer’s darkroom/studio, with pictures of Cruz strung from wires across the walls. Aaron Eckhart, Eva Mendes, Adrien Brody, Drew Barrymore and others in the crowd milled about, captivated
by the images.

In one room, “Demi and Ashton huddled together for most of the night, but Ashton eventually broke off and was engrossed with Quincy Jones in the corner,” our spy reports. “I wouldn’t be surprised if they announced a joint project in six months, after their intense conversation.”

Johansson shocked the 100 or so guests with her “deeply dyed red hair,” our spy dishes. “She told friends it was for an upcoming role, but people were still doing double takes.”

Meanwhile, a soda-sipping Colin Farrell, sporting a shaved head for similar reasons, headed upstairs with Hayak to help put Valentina to bed. And since rock star Prince was milling about, some guests were buzzing that he’d be performing on the grand piano in Hayek’s living room. But the Purple One never touched the keys. Instead, he opted for a chat with Weinstein, co-chair of the company that produced “Vicky.”

“Harvey was holding court in the middle of the room. Everyone was congratulating him on all his Oscar nods. Even Catherine Zeta Jones snuck up behind him and surprised him with a hug! He was getting a lot of praise for ‘The Reader,’ too,” said our spy.

The evening’s funniest moment? When Brett Ratner’s “slick blond date” kept accidentally dimming the lights by leaning on them. Snickered our source: “Brett and his girl were too busy putting their hands on each other to notice they almost shut off the lights!”

“Visitors at Christina Aguilera’s new Beverly Hills pad are in for some ‘shocking’ surprise, as the singer is allegedly planning to decorate her house with hubby Jordan Bratman’s choice of art. The record label executive was spotted checking out shock artist Cleon Peterson’s latest show at the New Image Art gallery in West Hollywood on Monday.

And it is believed that Bratman might just use one or two pieces, showing images of rape, mugging and brutality, to furnish the house they bought from The Osbournes. “It was clear he was there to check out Peterson’s The Occupation exhibition, which opened last week (ends23Jan09),” Contactmusic quoted one gallery regular who witnessed Bratman’s art interest.

He said: “The artist’s pieces look colourful and interesting from a distance, and closer inspection shows scenes of street violence. It’s quite disturbing. “He left the gallery without buying anything, but you could tell he was very interested. Maybe Christina will have to OK his strange choice in art before he buys.”

Huh. Maybe living at Ozzy’s house has it’s influences.
The singer told several sources the reason for the purchase and the move was largely in part to “The Osbournes” on TV. Christina was apparently such a big fan of the series, that just watching it convinced her she had to have it.

“I used to look at the kitchen on that show, and they could hang out in that little sitting area. It looked really cozy.” She told a source.
“It’s really perfect… We’re still a young couple, and we want to entertain and be able to have those times, so it’s a great house for all that.”
Christina also shared how she is turning Jack Osbourne’s old room into her own personal beauty parlor.

“That’s going to be my humongo (corr) dream closet and hair and beauty salon.”

We bring you the home of the He’s Just Not That Into You actress and former New York native Scarlett Johansson! The house had belonged to her friend and director/producer Harold Becker and Scarlett took it off his hands from more than $7 Million in 2007. The Spanish-style home has seven-bedrooms and is a luxurious 4,300 square feet, and includes almost an acre of property with a nice pool. The home is allegedly beautifully tiled and still has its original tiles in the bathrooms and kitchen, and is located in the Outpost Estates area of Hollywood. We wonder if this is where Scarlett and Ryan escape to when they need a break!

Jennifer Aniston has had a major upgrade! She has moved into her new home in the Hollywood Hills. The house which is nearly complete from all the renovations is situated just down the road from best friend Courtney Cox.Jennifer is doing her bit to help the enviroment by installing solar panels on her roof. Melanie Griffith’s Macadamia, Chocolate Chip, and Peanut Butter Mini-Turnovers

Macadamia nuts make the peanut butter filling in these turnovers unforgettable. It is a little like having a mini-candy bar wrapped in a puff pastry case. When you feel the urge coming on for these, there’s an easy solution: Prepare a full batch, then freeze some of them. They freeze beautifully, we are glad to say.

Makes 32 Mini-Turnovers
2 cups smooth peanut butter at room temperature
1/2 cup milk chocolate chips
1 cup toasted and chopped macadamia nuts
2 sheets (one 17 1/4-ounce package) frozen puff pastry, thawed according to the package directions
1 egg, lightly beaten
confectioners’ sugar for garnish (optional)
mint sprigs for garnish (optional)
vanilla ice cream as an accompaniment

Preheat the oven to 425°F. In a bowl, stir together the peanut butter, chocolate chips, and macadamia nuts until well combined. Work with 1 sheet of puff pastry at a time. Lightly flour a work surface. Lay 1 sheet of puff pastry on the surface and gently roll it out in all directions to thin it slightly. With a sharp knife, cut the sheets into quarters, then cut each quarter into quarters, making 16 pieces total. Center 1 teaspoon of the filling on each piece of pastry. Fold the pastry on the diagonal to form a triangle. Press the open edges of the pastry closed. (At this point the turnovers can be frozen. Arrange in layers, separated by sheets of waxed paper, in a freezer container.) Brush the top of the turnover with the beaten egg and place on a baking sheet. Make more mini-turnovers with the remaining ingredients in the same manner and brush with the beaten egg. Bake for 15 minutes. If the turnovers are frozen, preheat the oven to 475°F. Bake the pastries on the baking sheet for 5 minutes. Lower the heat to 400°F and bake for 15 minutes. Serve at once, dusted with confectioners’ sugar and garnished with a mint sprig, with the ice cream.
